Braised Beef Pie recipe

Flavorful beef is cooked in beer until tender and falling apart and then shredded and covered with hearty gravy. Top this with puff pastry and you could never have a better dinner. Serves 6.

Ingredients:

  • 1/4 cup olive oil
  • 1/2 pound chuck roast cubed
  • 1 bottle beer, honey brown or similar
  • 1 cup beef stock or more as needed
  • 1 large onion
  • 1 clove garlic
  • 1 8 ounce bag frozen peas and carrots
  • 1 sheet of puff pastry
  • salt and pepper, to taste

Directions:

  1. Place a large skillet over high heat until very hot. Add the olive oil and then the beef cubes. Only put enough so that they aren't touching, do not crowd the pan. Cook in batches if necessary.

  2. Brown the meat on all sides, about 10 minutes for each batch. Set aside.

  3. Add the onion and garlic into the pan and cook until browned, about 4 minutes.

  4. Pour in the beer and stock and add the beef back. Cover and cook over a simmer until the beef is tender and falling apart, about 3 hours. Add more stock if there is not enough liquid.

  5. Mash the beef with the back of a fork or pull it apart with the forks as you would with pulled pork.

  6. Add the peas and carrots and taste the beef and gravy. Season to taste with salt and pepper.

  7. Spoon the beef into 6 personal size oven proof dishes or into one large one. Top with puff pastry cut to fit.

  8. Bake at 375F or until pastry is golden brown.
