Tamale Pie recipe
A classic 50s style casserole dish that combines the flavors of taco meat with a cornbread topping. Really good and the kids will love it. Serves 4.
Ingredients:
- 1/2 onion, chopped
- 1 small bell pepper, chopped
- 1 pound ground chuck meat
- 1 8 ounce can tomato sauce
- 1/2 cup red wine
- 2 teaspoons chili powder
- 1 can of corn
- 1 can of cream corn
- 1 cup cornbread mix
- 1 cup grated cheddar cheese
- 2 tablespoons milk
- 1 egg
- 2 cups fritos corn chips, crushed
- salt and pepper, to taste
Directions:
In a large pot brown the ground meat until very brown, about 15 minutes.
Add the onion and green pepper and cook until soft, about 5 minutes.
Add the tomato sauce, red wine, chili powder, and corn. Cook until hot, about 2 minutes. Pour into a casserole dish.
In a medium bowl combine the cream corn with cornbread mix, 1/2 cup cheese, milk and egg. Stir until well combined, it should be pourable. If it is too thick add some more milk.
Pour this over the casserole and bake at 400F for 40 minutes or until cornbread is cooked and brown.
Immediately top with crushed fritos and remaining 1/2 cup cheese.
