Tomato and Goat Cheese Pie recipe

This is a great savory pie that would be very good served with a simple green salad for brunch or lunch. Serves 4 to 6.

Ingredients:

  • 1 9 inch pie crust
  • 1 large ripe tomato, heirloom preferred, sliced
  • 1 4-ounce goat cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup shredded Parmesan cheese
  • salt and pepper, to taste

Directions:

  1. Preheat oven to 350F. Place the pie crust into a 9 inch pie pan.

  2. Cook the crust until fully cooked, according to the crust recipe or until brown. Once cooked set aside to cool.

  3. In a small bowl combine the goat cheese with oregano, basil, garlic powder, and onion powder.

  4. Spread the goat cheese mixture into the bottom of the crust.

  5. Layer the tomatoes around the pan to form an ornate pattern. Season the tomatoes with salt and pepper.

  6. Sprinkle the Parmesan cheese over.

  7. Cook the pie until the cheese is browned, tomatoes are soft, and crust is crisp, about 15 minutes.
