Turkey and Potato Pot Pie recipe

Not only is this a great way to use leftover turkey from Thanksgiving but it is also healthy and low fat. Serves 6.

Ingredients:

  • 2 tablespoons butter
  • 1/2 small onion
  • 1 clove garlic, minced
  • 1 cup diced potato
  • 3 cups chicken stock
  • 1 cup cooked turkey
  • 1/2 cup corn kernels
  • 1/2 cup peas
  • 1/2 cup heavy cream
  • 1 9-inch pie crust
  • salt and pepper, to taste

Directions:

  1. Preheat oven to 350F.

  2. In a medium pot melt the butter over medium high heat. Add the onion and cook until translucent, about 5 minutes.

  3. Add the garlic and continue cooking until fragrant, about 2 minutes.

  4. Add the potato and chicken stock, bring to a simmer and cook until the potatoes are tender, about 8 minutes.

  5. Add the turkey, corn, peas, and cream. Season to taste with salt and pepper.

  6. Pour into a 9-inch pie pan and top with a pie crust.

  7. Bake until browned about 35 minutes.
