Turkey and Potato Pot Pie recipe
Not only is this a great way to use leftover turkey from Thanksgiving but it is also healthy and low fat. Serves 6.
Ingredients:
- 2 tablespoons butter
- 1/2 small onion
- 1 clove garlic, minced
- 1 cup diced potato
- 3 cups chicken stock
- 1 cup cooked turkey
- 1/2 cup corn kernels
- 1/2 cup peas
- 1/2 cup heavy cream
- 1 9-inch pie crust
- salt and pepper, to taste
Directions:
Preheat oven to 350F.
In a medium pot melt the butter over medium high heat. Add the onion and cook until translucent, about 5 minutes.
Add the garlic and continue cooking until fragrant, about 2 minutes.
Add the potato and chicken stock, bring to a simmer and cook until the potatoes are tender, about 8 minutes.
Add the turkey, corn, peas, and cream. Season to taste with salt and pepper.
Pour into a 9-inch pie pan and top with a pie crust.
Bake until browned about 35 minutes.
